Scalloped Ulu (Breadfruit) - Lois Colton and Betty Crocker
1 large Ulu with white sap dripping down the sides
some raw potatoes also if desired. (peeled and
cubed)
Put ulu microwavable plate and place in microwave
for about 12 (newer stoves)- 25 minutes (older) depending on oven
wattage & size of Ulu.
Cool to touch. Peel. Cut in quarters and take
out seeds. Chop into little cubes about 1/2 or so. (smaller is better)
Grease or spray baking dish. (You might
need two)
Make RUNNY - THIN White Sauce
make as many batches of sauce as needed for pan.
Breadfruit should be covered with the sauce. 9 X 13 pan takes more than
one batch.
One batch of Thin White Sauce
4 Tablespoons margarine or butter
4 Tablespoons flour
1 teaspoon salt
1/2 teaspoon pepper
4 cups milk
Heat margarine over low heat until melted. Blend
in flour, salt, and pepper. Cook over low heat, stirring constantly, until
smooth and bubbly: remove
from heat. Stir in milk a little at a time. Heat
to boiling, stirring constantly. Boil and stir one minute. Pour sauce into
baking dish until Ulu is covered.
Optional other ingredients: Ham, cheese, onions.
Bake Scalloped Ulu at 350 degrees F for about 1.5 hours or until done.

Ulu Lupulu - Lois Colton
1 breadfruit (microwave 12 (newer microwave ovens)
minutes - 25 minutes, cool to touch, peel, cut into little cubes)
1 onion, chopped (cooked or uncooked which ever
you prefer.)
1-2 cans spinach, not drained
1-2 cans coconut milk
2 cans corned beef
water as needed to thin
Combine cooked and cubed Ulu ( Little Cubes) with chopped onion, spinach, coconut milk, and corned beef. Heat until hot and then let sit to cool on countertop and then fridge. When ready to eat, heat and serve. Rice is always good with it.
Gourmet Ulu Lupulu - Lois Colton
Same as above except you roast pieces of corned
beef (side or points) for about 4 hours, and then combine with the above
ingredients, omitting the canned corned beef.

Ulu Chicken Stroganoff - Lois Colton
1 breadfruit (microwave12-25 minutes, cool to
touch, peel, cut into little cubes)
1 onion, chopped
6 chicken breasts, cubed
2-3 cans cream of mushroom soup
1-2 cups sour cream
Cook cubed chicken and onion in pan with lid on.
Stir occasionally. Should not stick, but also does not usually need butter
or water either.
When done (don't cook too long, just until barely
done)
Add cooked breadfruit/ulu.
Add soup and sour cream and heat.
Add a little water if needed. (Ulu absorbs liquid.)
Serve over rice, noodles, or bread
You can also make this without the Ulu, and you don't need to add any water.
Death by Breadfruit - Lois Colton
makes large foil pan
2-3 large breadfruits(microwave each12-25 minutes,
cool to touch, peel, cut into little cubes, put into foil pan)
1 pound butter melted and poured over breadfruit,
toss lightly.
1 pound bacon, cut into little pieces, cooked
and sprinkled over breadfruit
2 pounds or so grated cheese, sprinkled over
breadfruit
sour cream blopped onto top of breadfruit
serve and enjoy. :-)
Variation of above: Add steamed or microwaved vegetables to pan.
Ulu Ambrosia (inspired by Hauula 4th ward) - Lois Colton
1 breadfruit, cooked in microwave 12-25 minutes
depending on wattage, cool to touch, peel, cut into tidbit size cubes
1 fresh pineapple, cut into tidbit size pieces.
1 can coconut milk
1/4 cup sugar
1 8-ounce container of cool whip.
1/2 cup grated coconut
optional: 1 can mandarin oranges, drained.
optional: marshmallows
Combine above ingredients except cool whip
Refrigerate overnight. Carefully add cool whip
right before serving.
Serve about 12
